  • 1 lb boneless chicken thigh
  • 1 teaspoon cornstarch
  • 1/4 cup light soy sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon rice apple vinegar (optional)
  • 3 cloves of garlic, smashed
  • 1 tablespoon cooking oil
  • 1 medium zucchini, cut in half lengthwise and then sliced
  • 1 tablespoon oyster sauce
  • Ground black pepper, optional

Instructions

  1. Cut the chicken into bite-sized pieces. In a mixing bowl, combine the chicken with cornstarch, soy sauce, sesame oil, sugar (or honey), rice apple vinegar (if using), and smashed garlic. Marinate for 30 minutes.
  2. Heat cooking oil in a wok or large frying pan over medium-high heat. Add the marinated chicken along with the marinade and stir fry for about 2 minutes until no longer translucent. Transfer to a plate.
  3. In the same pan, add more oil if necessary and stir fry sliced zucchini for about 5 minutes until tender.
  4. Return the cooked chicken to the pan with zucchini, adding oyster sauce and ground black pepper if desired. Stir fry together for an additional 2-3 minutes.
  5. Serve immediately over white rice or noodles.
