- 1 lb boneless chicken thigh
- 1 teaspoon cornstarch
- 1/4 cup light soy sauce
- 1 teaspoon sesame oil
- 2 teaspoons sugar (or honey)
- 1 tablespoon rice apple vinegar (optional)
- 3 cloves of garlic, smashed
- 1 tablespoon cooking oil
- 1 medium zucchini, cut in half lengthwise and then sliced
- 1 tablespoon oyster sauce
- Ground black pepper, optional
Instructions
- Cut the chicken into bite-sized pieces. In a mixing bowl, combine the chicken with cornstarch, soy sauce, sesame oil, sugar (or honey), rice apple vinegar (if using), and smashed garlic. Marinate for 30 minutes.
- Heat cooking oil in a wok or large frying pan over medium-high heat. Add the marinated chicken along with the marinade and stir fry for about 2 minutes until no longer translucent. Transfer to a plate.
- In the same pan, add more oil if necessary and stir fry sliced zucchini for about 5 minutes until tender.
- Return the cooked chicken to the pan with zucchini, adding oyster sauce and ground black pepper if desired. Stir fry together for an additional 2-3 minutes.
- Serve immediately over white rice or noodles.
