  • 1 cup Fresh parsley, chopped
  • 4 cloves Garlic, minced
  • ¼ cup Red apple vinegar
  • ½ cup Olive oil
  • ½ teaspoon Red pepper flakes
  • Salt and pepper to taste
  • 1 cup Mayonnaise
  • ½ cup Sour cream or Greek yogurt
  • 1 tablespoon Lemon juice
  • 1 cup Diced tomatoes
  • 2 cups Fresh greens (spinach or arugula)

Instructions

  1. Marinate the Chicken: In a mixing bowl, combine olive oil, 2 cloves minced garlic, parsley, red apple vinegar, salt, and pepper. Add chicken breasts and coat thoroughly. Cover and marinate for at least 30 minutes or overnight.
  2. Prepare Chimichurri Sauce: In a food processor or bowl, blend parsley, remaining garlic, red pepper flakes, red apple vinegar, olive oil, and salt until chunky. Set aside.
  3. Make Garlic Sauce: Mix mayonnaise, sour cream (or yogurt), lemon juice, remaining garlic until smooth. Chill in the fridge.
  4. Grill the Chicken: Preheat grill over medium-high heat. Grill chicken for about 5–7 minutes per side until cooked through (165°F). Let rest before slicing.
  5. Assemble Bowls: Layer fresh greens in bowls; top with sliced chicken, chimichurri sauce, diced tomatoes, and garlic sauce.
