  • 2 ribeye or New York strip steaks (1.5 inches thick)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 1 cup fresh parsley leaves
  • 3 garlic cloves
  • 2 tablespoons fresh oregano leaves
  • 1/2 cup extra virgin olive oil
  • 2 tablespoons red apple vinegar
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Remove the steaks from the refrigerator and let them reach room temperature (30-45 minutes).
  2. In a medium bowl, combine parsley, garlic, oregano, olive oil, vinegar, red pepper flakes, salt, and black pepper. Mix well and set aside for at least 10 minutes.
  3. Pat the steaks dry and season generously with salt and pepper on both sides.
  4. Heat a cast-iron skillet over high heat for 3-5 minutes. Add olive oil.
  5. Sear steaks for 3-4 minutes on each side until golden brown for medium-rare.
  6. Rest the steaks under foil for 5-10 minutes before slicing against the grain.
  7. Drizzle with chimichurri sauce before serving.
