  • 1 1/2 tsp chipotle chili powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup black beans
  • 1 cup corn kernels
  • 2 cups cooked rice
  • 2 tbsp lime juice
  • 1/2 cup sour cream or Greek yogurt
  • 2 tbsp mayonnaise
  • 2 tbsp chopped cilantro (optional)

Instructions

  1. Season chicken thighs with chipotle chili powder, garlic powder, salt, and pepper.
  2. Heat a cast iron skillet over medium-high heat and cook chicken for about 6-8 minutes on each side until fully cooked. Let it rest before slicing.
  3. Mix sour cream (or Greek yogurt), mayonnaise, lime juice, a pinch of chipotle powder, and salt in a bowl to make the creamy sauce.
  4. Warm black beans and corn in a pan over low heat with a splash of lime juice.
  5. Assemble bowls with rice at the bottom, topped with sliced chicken, beans, corn mixture, and creamy sauce.
