  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1½ cups powdered icing sugar
  • ½ cup unsalted butter (room temperature)
  • 1 tablespoon milk
  • ½1 teaspoon mint extract (depending on your tastes)
  • green food coloring (optional)
  • ¾ cup semisweet chocolate chips or chopped chocolate (130 grams)
  • 1 tablespoon oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together unsalted butter and granulated sugar until fluffy. Add vanilla extract and egg; mix well.
  3. In another bowl, whisk flour, cocoa powder, baking soda, and salt. Gradually combine with the wet mixture.
  4. Line a baking sheet with parchment paper. Scoop tablespoon-sized portions onto the sheet, spacing them 2 inches apart.
  5. Bake for 10 minutes until set but soft in the center. Cool on the sheet for 5 minutes before transferring to a wire rack.
  6. For the frosting, beat powdered sugar, unsalted butter, milk, mint extract, and green food coloring (if desired) until creamy.
