  • 3 large eggs
  • 1 cup vegetable oil
  • 3 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 cups grated zucchini
  • 12 oz semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F and prepare two loaf pans by greasing them.
  2. In a mixing bowl, whisk together sugar, eggs, vegetable oil, and vanilla extract until well combined.
  3. Add all-purpose flour, cocoa powder, salt, baking powder, baking soda, cinnamon, and nutmeg to the wet mixture; mix until just combined.
  4. Gently fold in grated zucchini and 8 oz of chocolate chips.
  5. Divide the batter between the prepared pans and top with remaining chocolate chips.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  7. Cool in pans for 5-10 minutes before transferring to wire racks.
