  • 3 cloves garlic (minced)
  • Salt and freshly ground black pepper
  • 1 1/2 medium avocados (ripe but semi-firm, diced)
  • 2 medium Roma tomatoes (chopped)
  • 1/2 cup chopped red onion (rinsed under cool water to remove harsh bite)
  • 1 clove garlic (minced)
  • 1 Tbsp fresh lime juice

Instructions

  1. In a mixing bowl, combine lime zest, fresh lime juice, olive oil, honey, chopped cilantro, minced garlic, salt, and pepper. Whisk until well blended.
  2. Place chicken breasts in a shallow dish or resealable bag. Pour marinade over the chicken, ensuring all pieces are coated. Refrigerate for at least 15 minutes to allow flavors to meld.
  3. In another mixing bowl, combine diced avocados, chopped tomatoes, rinsed red onion, minced garlic, and fresh lime juice. Gently toss until combined. Season with salt to taste.
  4. Preheat your grill to medium-high heat. Brush grates with olive oil to prevent sticking. Remove chicken from marinade; discard leftover marinade. Grill chicken breasts for about 5 minutes on each side or until fully cooked through (internal temperature should reach 165°F).
