  • 3 cups cooked white or brown rice
  • 2 cups shredded cooked chicken or turkey
  • 1 can cream of chicken soup
  • 1 can French onion soup
  • 1 cup dairy-free yogurt or sour cream
  • 1 cup shredded mozzarella or Swiss cheese
  • 1 cup French fried onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. 1. Preheat your oven to 350°F (175°C).
  2. 2. In a large mixing bowl, combine cooked rice, shredded chicken, cream of chicken soup, French onion soup, dairy-free yogurt, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. 3. Transfer half of the mixture into a greased casserole dish. Sprinkle half of the shredded cheese and half of the French fried onions on top.
  4. 4. Add the remaining mixture evenly on top and finish with the rest of the cheese and fried onions.
  5. 5. Bake in the preheated oven for about 35 minutes until bubbly and golden.
  6. 6. Let cool slightly before garnishing with chopped parsley and serving.
