  • 4 large ears fresh corn (shucked)
  • 1 heaping cup halved grape tomatoes
  • 1 cup diced English cucumber
  • 1/3 cup diced red onion
  • 2/3 cup crumbled feta cheese
  • 3 Tbsp finely chopped fresh parsley
  • 2 Tbsp finely chopped fresh basil
  • 1/4 cup olive oil
  • 1 1/2 Tbsp red apple vinegar
  • 1 Tbsp lemon juice
  • 1 1/2 tsp honey
  • 1/2 tsp minced garlic
  • Salt and freshly ground black pepper to taste

Instructions

  1. Make the dressing by whisking together olive oil, red apple vinegar, lemon juice, honey, minced garlic, salt, and pepper in a mixing bowl. Refrigerate.
  2. Boil water in a large pot. Prepare an ice water bowl nearby. Cook the corn for about 3 minutes until tender-crisp. Transfer to the ice water to cool before draining.
  3. Cut kernels from the cooled corn and place them in a large bowl. Add grape tomatoes, cucumber, red onion, feta cheese, parsley, and basil.
  4. Pour the chilled dressing over the salad mixture and toss well to coat evenly. Adjust seasoning if necessary.
