- 4 large ears fresh corn (shucked)
- 1 heaping cup halved grape tomatoes
- 1 cup diced English cucumber
- 1/3 cup diced red onion
- 2/3 cup crumbled feta cheese
- 3 Tbsp finely chopped fresh parsley
- 2 Tbsp finely chopped fresh basil
- 1/4 cup olive oil
- 1 1/2 Tbsp red apple vinegar
- 1 Tbsp lemon juice
- 1 1/2 tsp honey
- 1/2 tsp minced garlic
- Salt and freshly ground black pepper to taste
Instructions
- Make the dressing by whisking together olive oil, red apple vinegar, lemon juice, honey, minced garlic, salt, and pepper in a mixing bowl. Refrigerate.
- Boil water in a large pot. Prepare an ice water bowl nearby. Cook the corn for about 3 minutes until tender-crisp. Transfer to the ice water to cool before draining.
- Cut kernels from the cooled corn and place them in a large bowl. Add grape tomatoes, cucumber, red onion, feta cheese, parsley, and basil.
- Pour the chilled dressing over the salad mixture and toss well to coat evenly. Adjust seasoning if necessary.
