  • 15.5 oz black beans, drained and rinsed
  • 15.5 oz black-eyed peas, drained and rinsed
  • 15 oz sweet corn, drained
  • 1 cup fresh cilantro, chopped
  • ½ cup red bell pepper, diced
  • ½ cup orange bell pepper, diced
  • ½ cup red onion, diced
  • 1 tsp chili powder
  • ½ tsp kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white apple vinegar
  • 1 tbsp fresh lime juice
  • ¼ tsp garlic powder

Instructions

  1. Drain and rinse the black beans, black-eyed peas, and sweet corn thoroughly. Pat dry with paper towels.
  2. In a large mixing bowl, combine the beans and corn with chopped cilantro, diced red bell pepper, orange bell pepper, and red onion.
  3. In a separate bowl, whisk together chili powder, kosher salt, granulated sugar, olive oil, white apple vinegar, fresh lime juice, and garlic powder until smooth.
  4. Pour the dressing over the bean mixture and gently stir until everything is evenly coated.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
