Ingredients

  • 1 lb ground beef
  • ½ cup breadcrumbs
  • 1 large egg
  • ¼ cup milk
  • 2 tbsp butter
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 cups egg noodles or diced potatoes
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp nutmeg

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, egg, milk, onion powder, garlic powder, salt, and black pepper. Mix well and form into 1-inch meatballs.
  2. Heat oil in a skillet over medium heat and brown the meatballs for about 4-5 minutes. Remove from skillet and set aside.
  3. In a large pot, melt butter and sauté onion, carrots, and celery until softened (about 5-7 minutes). Stir in flour to create a roux.
  4. Gradually whisk in beef broth until smooth. Add nutmeg, salt, and pepper; then return meatballs to the pot along with noodles or potatoes. Simmer for 10-12 minutes until cooked through.
  5. Stir in heavy cream and heat for another 2-3 minutes before serving.
