- 1 lb ground beef
- ½ cup breadcrumbs
- 1 large egg
- ¼ cup milk
- 2 tbsp butter
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups beef broth
- 1 cup heavy cream
- 2 cups egg noodles or diced potatoes
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp nutmeg
Instructions
- In a large mixing bowl, combine ground beef, breadcrumbs, egg, milk, onion powder, garlic powder, salt, and black pepper. Mix well and form into 1-inch meatballs.
- Heat oil in a skillet over medium heat and brown the meatballs for about 4-5 minutes. Remove from skillet and set aside.
- In a large pot, melt butter and sauté onion, carrots, and celery until softened (about 5-7 minutes). Stir in flour to create a roux.
- Gradually whisk in beef broth until smooth. Add nutmeg, salt, and pepper; then return meatballs to the pot along with noodles or potatoes. Simmer for 10-12 minutes until cooked through.
- Stir in heavy cream and heat for another 2-3 minutes before serving.
