  • 1 cup shredded mild or medium cheddar cheese, divided
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1/4 cup mayonnaise
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 1/8 tsp. salt
  • 1 1/2 cups cracker crumbs
  • 1/4 cup melted butter

Instructions

  1. Thaw and warm broccoli florets in the microwave for about 5 minutes; drain well and cut into smaller pieces.
  2. In a bowl, mix the broccoli with half of the cheddar cheese, cream of mushroom soup, mayonnaise, milk, egg, and salt.
  3. Transfer the mixture to a greased baking dish and sprinkle with remaining cheddar cheese.
  4. Combine cracker crumbs with melted butter; evenly distribute over the top of the casserole.
  5. Preheat your oven to 350°F (175°C) and bake for 45-50 minutes until bubbly and golden brown.
