  • 2 boneless, skinless chicken breasts
  • 12 oz penne, fettuccine, or spaghetti
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 4 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • Salt and pepper, to taste

Instructions

  1. Cook pasta in a large pot of salted boiling water until al dente. Reserve some pasta water before draining.
  2. In a skillet over medium heat, season chicken with salt, pepper, and Cajun seasoning. Sear in olive oil for about 6-7 minutes per side until golden brown. Remove and slice.
  3. In the same skillet, melt butter and sauté garlic until fragrant. Add Cajun seasoning and smoked paprika; cook briefly.
  4. Stir in heavy cream and chicken broth; simmer until slightly thickened. Mix in Parmesan cheese until melted.
  5. Combine cooked pasta with the sauce and sliced chicken; adjust with reserved pasta water if necessary.
  6. Serve warm with optional garnishes like parsley or red pepper flakes.
