- 12 oz rotini pasta
- 2 tbsp olive oil
- 1 tbsp butter (for searing)
- 1 tsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt & black pepper, to taste
- 2 tbsp butter (for sauce)
- 4 cloves garlic, finely minced
- 1 cup heavy cream
- 1 cup whole milk
- 4 oz cream cheese, softened
- 1 cup Velveeta, cubed
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Pinch of red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook rotini pasta according to package instructions until al dente; drain and set aside.
- In a skillet, heat olive oil and butter over medium-high heat. Season chicken with Cajun spices and sear until golden brown (6-8 minutes). Remove chicken from skillet.
- In the same skillet, melt butter; sauté garlic until fragrant. Stir in heavy cream, milk, and cream cheese until smooth. Add Velveeta; stir until melted.
- Combine cooked rotini in the sauce, folding gently to coat evenly.
- Serve with seared chicken on top and garnish with fresh parsley.
