Ingredients

  • 2 tbsp olive oil
  • 1 lb boneless chicken breast or thighs, cut into bite-sized pieces
  • 4 garlic cloves, minced
  • 3 cups baby spinach
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne or fusilli pasta
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese

Instructions

  1. 1. Heat olive oil in a large pot over medium heat. Season chicken with salt and pepper, add to the pot, and sauté until golden brown. Remove from pot.
  2. 2. In the same pot, cook turkey bacon until crispy (if using). Remove any excess fat.
  3. 3. Add garlic to the pot; sauté for about 30 seconds until fragrant. Stir in spinach until wilted.
  4. 4. Return chicken to the pot; pour in chicken broth and bring to a simmer. Stir in heavy cream.
  5. 5. Add pasta directly into the pot; cover and cook according to package instructions until al dente.
  6. 6. Once cooked, stir in mozzarella and Parmesan cheese until melted.
