- 2 tbsp olive oil
- 1 lb boneless chicken breast or thighs, cut into bite-sized pieces
- 4 garlic cloves, minced
- 3 cups baby spinach
- 2 cups chicken broth
- 1 cup heavy cream
- 8 oz penne or fusilli pasta
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
Instructions
- 1. Heat olive oil in a large pot over medium heat. Season chicken with salt and pepper, add to the pot, and sauté until golden brown. Remove from pot.
- 2. In the same pot, cook turkey bacon until crispy (if using). Remove any excess fat.
- 3. Add garlic to the pot; sauté for about 30 seconds until fragrant. Stir in spinach until wilted.
- 4. Return chicken to the pot; pour in chicken broth and bring to a simmer. Stir in heavy cream.
- 5. Add pasta directly into the pot; cover and cook according to package instructions until al dente.
- 6. Once cooked, stir in mozzarella and Parmesan cheese until melted.
