  • 1 small yellow onion (diced)
  • 1 jalapeno pepper (diced)
  • 5 cups chicken broth
  • 2 small boneless skinless chicken breasts (or shredded chicken)
  • 1 ½ cups cheddar cheese (shredded)
  • 1/3 cup cream cheese (softened)
  • Corn or flour tortillas

Instructions

  1. In a large pot over medium heat, melt butter and sauté diced onions and jalapeno for about 5–6 minutes until softened. Add minced garlic and cook for another minute.
  2. Stir in chicken broth, diced tomatoes, corn, black beans, chicken breasts, taco seasoning, cayenne pepper, and hot sauce. Bring to a gentle simmer.
  3. After 20–25 minutes or until chicken is cooked through, remove it from the pot and shred using two forks.
  4. Return shredded chicken to the pot. Lower heat and gradually stir in cheddar cheese and cream cheese until melted and creamy.
  5. Taste and adjust seasonings if needed before serving.
