- 15 oz Black Beans
- 2 medium Potatoes
- 1 tbsp Smoked Paprika
- 1 tbsp Chili Powder
- 1 tsp Cumin
- 1 tsp Salt
- 0.5 tsp Black Pepper
- 1 cup Heavy Cream (or coconut milk)
- 1 cup Shredded Cheddar Cheese
Instructions
- In a large pot over medium heat, brown the ground beef. Add chopped onion and minced garlic; sauté until softened.
- Stir in diced potatoes, corn, black beans, diced tomatoes, smoked paprika, chili powder, cumin, salt, and pepper.
- Pour in the broth and bring to a boil. Reduce heat and simmer until potatoes are tender (about 20 minutes).
