  • 1 large Onion
  • 3 cloves Garlic
  • 4 cups Beef Broth (or vegetable broth)
  • 14.5 oz Diced Tomatoes
  • 1 cup Corn
  • 15 oz Black Beans
  • 2 medium Potatoes
  • 1 tbsp Smoked Paprika
  • 1 tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 1 cup Heavy Cream (or coconut milk)
  • 1 cup Shredded Cheddar Cheese

Instructions

  1. In a large pot over medium heat, brown the ground beef. Add chopped onion and minced garlic; sauté until softened.
  2. Stir in diced potatoes, corn, black beans, diced tomatoes, smoked paprika, chili powder, cumin, salt, and pepper.
  3. Pour in the broth and bring to a boil. Reduce heat and simmer until potatoes are tender (about 20 minutes).
  4. Stir in heavy cream or coconut milk and heat through without boiling.
  5. Serve hot with shredded cheddar cheese on top.
