  • 1 cup grated Parmesan cheese
  • 12 oz linguine pasta
  • 1 cup heavy cream
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • 1 tablespoon chopped parsley (optional)
  • ¼ cup reserved pasta water (if needed)

Instructions

  1. Season chicken strips with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Sear chicken until golden brown (4-5 minutes per side) and sprinkle Parmesan on top to melt.
  3. Cook linguine in salted boiling water until al dente; reserve pasta water before draining.
  4. In the same skillet, melt remaining butter and sauté minced garlic until fragrant. Add heavy cream and Velveeta until melted into a smooth sauce.
  5. Stir in shredded mozzarella and Parmesan until thickened; adjust with reserved pasta water if needed.
  6. Toss cooked linguine in the sauce until evenly coated. Let simmer briefly.
  7. Serve by plating linguine with seared chicken on top; garnish with parsley if desired.
