- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 lb rotini pasta
- 4 cups heavy cream
- 1 cup grated Parmesan cheese
- 8 cloves garlic, minced
- 1/2 cup chicken broth
- 2 tbsp olive oil
- 10 tbsp unsalted butter
- 1 tbsp Cajun seasoning
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 cup chopped fresh chives
Instructions
- In a medium bowl, season chicken cubes with Cajun seasoning, smoked paprika, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Cook seasoned chicken until golden brown (6-8 minutes). Remove from skillet.
- In the same skillet, melt butter and sauté minced garlic until fragrant.
- Cook rotini pasta according to package directions; drain and reserve 1 cup of pasta water.
- In a large pot, melt butter and cook garlic until fragrant. Add cream and chicken broth; bring to simmer.
- Stir in Parmesan cheese, seasonings and simmer until thickened (5-7 minutes).
- Combine cooked rotini with sauce; gradually add reserved pasta water for desired consistency.
- Add chicken to the pot; toss well to combine. Serve immediately with extra Parmesan cheese.
