  • 1 pound ground beef
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 10 ounces frozen spinach, thawed
  • 3 cups whole milk
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 4 tablespoons unsalted butter
  • 1 cup all-purpose flour
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste

Instructions

  1. Cook the tortellini in boiling salted water for 3-5 minutes; drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat and brown the ground beef for about 7-9 minutes. Drain excess fat.
  3. Add chopped onion and cook until softened (4-5 minutes). Stir in garlic and spinach; cook for another 2-3 minutes.
  4. In a separate saucepan, melt butter, then whisk in flour to make a roux. Gradually add milk and chicken broth while whisking; simmer until thickened (5-7 minutes).
  5. Stir in heavy cream, cheeses, and seasonings until melted and creamy.
  6. Combine cooked tortellini with the meat-spinach mixture into the sauce; stir gently.
  7. Serve hot with optional Parmesan or fresh herbs.
