  • 8 oz elbow macaroni
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes (oil-packed, chopped)
  • ½ cup fresh basil (chopped)
  • 1 cup non-dairy milk (almond or oat)
  • 1 tsp agar-agar powder
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook elbow macaroni in salted boiling water until al dente, about 8-10 minutes. Drain and set aside.
  2. In a saucepan over medium heat, whisk together non-dairy milk, agar-agar powder, garlic powder, salt, and pepper until smooth and slightly thickened.
  3. Remove from heat and stir in mozzarella until melted; then mix in Parmesan until fully combined.
  4. In a large bowl, combine cooked pasta with sun-dried tomatoes and basil. Pour the cheese sauce over the mixture and stir until evenly coated.
  5. Preheat oven to 350°F (175°C). Transfer mixture to a greased baking dish and bake for 20 minutes or until bubbly and golden brown.
  6. Serve hot, garnished with extra basil or Parmesan if desired.
