- 2 cups vegetable oil (for frying)
Instructions
- In a skillet over medium heat, sauté the ground beef until fully cooked. Drain excess fat and add the chopped onion; cook until translucent.
- Stir in chili powder, cumin, salt, and pepper until well combined.
- Remove from heat and mix in both cheeses until melted.
- Place about two tablespoons of filling onto each tortilla, fold in the sides, and roll tightly.
- Heat oil in a skillet over medium-high heat. Fry chimichangas seam-side down until golden brown, about 3-4 minutes per side.
