  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • 1 small onion, chopped
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 cups vegetable oil (for frying)

Instructions

  1. In a skillet over medium heat, sauté the ground beef until fully cooked. Drain excess fat and add the chopped onion; cook until translucent.
  2. Stir in chili powder, cumin, salt, and pepper until well combined.
  3. Remove from heat and mix in both cheeses until melted.
  4. Place about two tablespoons of filling onto each tortilla, fold in the sides, and roll tightly.
  5. Heat oil in a skillet over medium-high heat. Fry chimichangas seam-side down until golden brown, about 3-4 minutes per side.
  6. Transfer to paper towels to drain excess oil. Serve hot with salsa or guacamole.
