  • 2 large tomatoes (250g), finely chopped
  • 1/2 red onion, finely chopped
  • 2 large garlic cloves, minced
  • Zest of 1 lemon
  • 85g plain flour
  • 1/2 teaspoon baking powder
  • 1/2 bunch dill (10g), finely chopped
  • 1/2 bunch parsley (15g), finely chopped
  • Salt and black pepper to taste
  • Olive oil for frying

Instructions

  1. In a large mixing bowl, finely chop the tomatoes and add them.
  2. Mix in the red onion, minced garlic, lemon zest, dill, parsley, flour, baking powder, salt, and pepper until well combined.
  3. Heat olive oil in a frying pan over medium heat.
  4. Drop heaping tablespoons of the mixture into the hot oil and fry until golden brown on both sides.
  5. Serve immediately while hot and crispy.
