- 2 light green zucchinis (about 380 grams)
- 120 grams Greek feta cheese (crumbled)
- 1/2 small red onion (minced)
- 1 large egg
- 7 tablespoons all-purpose flour
- 1 teaspoon fresh mint (or dill), chopped
- Salt & pepper to taste
- Olive oil for frying
Instructions
- Grate the zucchinis finely using a box grater and place them in a large mixing bowl.
- Add crumbled feta cheese, minced red onion, egg, flour, chopped mint leaves (or dill), salt, and pepper to the bowl. Mix until you have a thick mixture.
- Heat olive oil in a non-stick frying pan over medium-high heat.
- Take spoonfuls of the mixture and drop them into the hot oil. Fry about 5-6 fritters at a time for 3 minutes on each side until golden brown.
- Transfer cooked fritters to paper towels to drain excess oil. Serve warm with your favorite dip.
