  • 2 tablespoons red curry paste
  • 3 cloves garlic, minced

Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Sprinkle garlic and ginger over the chicken.
  3. Layer carrots, bell peppers, and snap peas or green beans on top.
  4. Pour in coconut milk and chicken broth.
  5. Stir in red curry paste until well combined.
  6. Season with salt and pepper to taste.
  7. Cover and cook on low for 4-6 hours or high for 2-3 hours until the chicken is tender.
  8. Shred the chicken with two forks about 30 minutes before serving.
