  • 15 ounces Black Beans
  • 15 ounces Red Beans
  • 15 ounces Tomato Sauce
  • 1 medium Bell Pepper (any color)
  • 3/4 cup Salsa
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1/2 tsp Cumin
  • 1/4 tsp Cayenne Pepper
  • 1/2 cup Light Cream Cheese
  • Salt (to taste)
  • Pepper (to taste)
  • Crushed Tortilla Chips
  • Sliced Avocado
  • Sour Cream
  • Diced Jalapeños
  • Chopped Red Onion
  • Shredded Cheddar
  • Fresh Cilantro

Instructions

  1. Prepare your ingredients by chopping the onion, jalapeño pepper, and bell pepper into small pieces. Rinse the lentils and beans thoroughly.
  2. In your Crockpot, combine chopped onion, jalapeño pepper, corn, red lentils, tomato sauce, black beans, red beans, bell pepper, and salsa.
  3. Pour in the vegetable broth and stir in smoked paprika, garlic powder, cumin, cayenne pepper, salt, and pepper.
  4. Cover the crockpot and cook on low for about 8 hours or high for about 4 hours.
  5. Once cooked, stir in cream cheese until melted and well blended. Adjust seasoning if necessary.
  6. Serve hot with your choice of toppings such as tortilla chips, avocado slices, sour cream, diced jalapeños, red onion, shredded cheddar cheese, and cilantro.
