  • 1 cup strawberries, hulled and sliced
  • 1 large English cucumber, thinly sliced (or 3 Persian cucumbers)
  • 2 tbsp chopped fresh mint or basil
  • 2 tbsp slivered almonds, sunflower seeds, or walnuts, toasted (optional)
  • 1 tbsp fresh lemon juice or balsamic vinegar
  • 1 tsp honey or maple syrup
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Wash and dry strawberries and cucumbers. Hull and slice strawberries; thinly slice cucumbers.
  2. In a small bowl, whisk together lemon juice (or balsamic vinegar), honey (or maple syrup), olive oil, salt, and pepper.
  3. In a mixing bowl, combine cucumbers, strawberries, chopped herbs, and cheese if desired.
  4. Drizzle half the dressing over the salad and toss gently to coat.
  5. Transfer to a serving platter, garnish with nuts/seeds, and drizzle with remaining dressing before serving.
