- In a medium saucepan, combine heavy cream, milk, and vanilla over medium heat until steaming (about 8 minutes). Avoid boiling.
- Whisk egg yolks and sugar in a bowl until thick and pale. Slowly add some hot milk mixture while whisking to temper the eggs. Pour back into the saucepan and stir continuously.
- Cook on medium-low heat until it reaches 180°F and coats the back of a spoon. Remove from heat.
- Strain custard through a fine mesh strainer into a bowl over an ice bath to cool completely. Cover with plastic wrap directly on the surface and refrigerate for at least 4 hours or overnight.
