Ingredients
- 1 cup chocolate graham cracker crumbs
- 6 tablespoons melted butter
- 1/4 cup sugar
- 1 teaspoon unflavored vegan gelatin
- 2 tablespoons cold water
- 4 ounces white chocolate chips
- 2 1/2 tablespoons milk or cream
- 1 tablespoon powdered sugar
- 1 cup heavy whipping cream
- 3–4 drops pure peppermint oil
- 1/4 cup heavy whipping cream
- 3 1/2 ounces bittersweet or dark chocolate
- 2 teaspoons light corn syrup
- 2 tablespoons very warm water
Instructions
- Preheat your oven to 350°F. In a mixing bowl, combine chocolate graham cracker crumbs, melted butter, and sugar. Press into a tart pan and bake for 10 minutes. Let cool.
- Bloom the vegan gelatin in cold water for 5 minutes, then microwave until dissolved.
- Melt white chocolate and mix with heated milk; add bloomed gelatin and peppermint oil.
- Whip heavy cream with powdered sugar until medium-stiff peaks form. Fold into the white chocolate mixture.
- Fill the cooled crust with mousse, smooth the top, and refrigerate until set (at least 3 hours).
- For the glaze, heat heavy cream and stir in dark chocolate until smooth; add corn syrup and warm water.
- Pour glaze over the tart and let it set before serving.
