  • 1 cup chocolate graham cracker crumbs
  • 6 tablespoons melted butter
  • 1/4 cup sugar
  • 1 teaspoon unflavored vegan gelatin
  • 2 tablespoons cold water
  • 4 ounces white chocolate chips
  • 2 1/2 tablespoons milk or cream
  • 1 tablespoon powdered sugar
  • 1 cup heavy whipping cream
  • 34 drops pure peppermint oil
  • 1/4 cup heavy whipping cream
  • 3 1/2 ounces bittersweet or dark chocolate
  • 2 teaspoons light corn syrup
  • 2 tablespoons very warm water

Instructions

  1. Preheat your oven to 350°F. In a mixing bowl, combine chocolate graham cracker crumbs, melted butter, and sugar. Press into a tart pan and bake for 10 minutes. Let cool.
  2. Bloom the vegan gelatin in cold water for 5 minutes, then microwave until dissolved.
  3. Melt white chocolate and mix with heated milk; add bloomed gelatin and peppermint oil.
  4. Whip heavy cream with powdered sugar until medium-stiff peaks form. Fold into the white chocolate mixture.
  5. Fill the cooled crust with mousse, smooth the top, and refrigerate until set (at least 3 hours).
  6. For the glaze, heat heavy cream and stir in dark chocolate until smooth; add corn syrup and warm water.
  7. Pour glaze over the tart and let it set before serving.
