  • 1 lb boneless chicken breast, thinly sliced
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1 cup snap peas
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp mushroom-based sauce
  • 1 tsp sesame oil
  • 1 tsp cornstarch mixed with 2 tbsp water

Instructions

  1. In a bowl, season the thinly sliced chicken with salt, pepper, and 1 tablespoon of soy sauce. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add the seasoned chicken and stir-fry for about 4-5 minutes until fully cooked. Remove from the pan.
  3. Add the remaining tablespoon of oil to the wok. Sauté garlic and ginger for about 30 seconds until fragrant.
  4. Toss in broccoli florets and julienned carrots; stir-fry for approximately 2 minutes until they soften slightly.
  5. Add sliced bell peppers and snap peas; cook for an additional 2 minutes until all vegetables are crisp-tender.
  6. Return cooked chicken to the wok and pour in remaining soy sauce, mushroom-based sauce, and sesame oil.
  7. Push ingredients to the sides of the wok; add cornstarch mixture to the center and stir continuously until thickened (about 1 minute).
  8. Mix everything together gently before serving.
