Ingredients
- 1 lb boneless chicken breast, thinly sliced
- 2 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 1 cup snap peas
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp mushroom-based sauce
- 1 tsp sesame oil
- 1 tsp cornstarch mixed with 2 tbsp water
Instructions
- In a bowl, season the thinly sliced chicken with salt, pepper, and 1 tablespoon of soy sauce. Set aside.
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add the seasoned chicken and stir-fry for about 4-5 minutes until fully cooked. Remove from the pan.
- Add the remaining tablespoon of oil to the wok. Sauté garlic and ginger for about 30 seconds until fragrant.
- Toss in broccoli florets and julienned carrots; stir-fry for approximately 2 minutes until they soften slightly.
- Add sliced bell peppers and snap peas; cook for an additional 2 minutes until all vegetables are crisp-tender.
- Return cooked chicken to the wok and pour in remaining soy sauce, mushroom-based sauce, and sesame oil.
- Push ingredients to the sides of the wok; add cornstarch mixture to the center and stir continuously until thickened (about 1 minute).
- Mix everything together gently before serving.
