  • 1 cup chopped fresh shiitake mushrooms
  • 3 teaspoons beef bouillon granules
  • 2 teaspoons chicken stock
  • 2 quarts water

Instructions

  1. Prepare the vegetables by chopping the carrots, onion, ginger, garlic, and celery. Slice the baby portobello and shiitake mushrooms, reserving some for later use.
  2. In a large saucepan or stockpot, combine all chopped vegetables with chicken stock, beef bouillon granules, and water. Bring to a rolling boil over high heat.
  3. Once boiling, cover the pot and reduce heat to medium. Allow the soup to cook for 45 minutes.
  4. For a smoother texture (optional), blend the soup using a blender or immersion blender until desired consistency is reached.
  5. Strain the cooked soup into a pot with remaining raw mushrooms using a strainer, discarding any solids left behind.
  6. Serve hot in small porcelain bowls garnished with freshly chopped chives.
