- 8 to 12 large mushrooms
- 1 (6 oz) can minced clams, drained (reserve 1/4 cup clam juice)
- 1 finely minced green onion
- 1 beaten egg
- 1/2 teaspoon minced garlic
- 1/8 teaspoon garlic salt
- 1/2 cup Italian-style breadcrumbs
- 1 teaspoon oregano
- 3 tablespoons melted butter (divided)
- 2 tablespoons finely grated Parmesan cheese
- 1 tablespoon finely grated Romano cheese
- 2 tablespoons finely grated Mozzarella cheese (for stuffing)
- 1/4 cup finely grated Mozzarella cheese (for garnish)
- Fresh parsley for garnish
- Lemon wedges for serving
Instructions
- Preheat oven to 350°F (175°C) and lightly oil a small baking dish.
- Clean and stem the mushrooms; reserve stems for another use.
- In a mixing bowl, combine minced clams, green onion, garlic, garlic salt, melted butter, oregano, breadcrumbs, beaten egg, and reserved clam juice until well mixed.
- Stir in Parmesan, Romano, and Mozzarella cheeses.
- Stuff each mushroom cap with about 1½ teaspoons of the filling.
- Arrange in the baking dish, drizzle with remaining melted butter, cover with foil, and bake for 35 to 40 minutes.
- Uncover, sprinkle with remaining Mozzarella cheese, and return to the oven until cheese is melted.
