  • 8 to 12 large mushrooms
  • 1 (6 oz) can minced clams, drained (reserve 1/4 cup clam juice)
  • 1 finely minced green onion
  • 1 beaten egg
  • 1/2 teaspoon minced garlic
  • 1/8 teaspoon garlic salt
  • 1/2 cup Italian-style breadcrumbs
  • 1 teaspoon oregano
  • 3 tablespoons melted butter (divided)
  • 2 tablespoons finely grated Parmesan cheese
  • 1 tablespoon finely grated Romano cheese
  • 2 tablespoons finely grated Mozzarella cheese (for stuffing)
  • 1/4 cup finely grated Mozzarella cheese (for garnish)
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Preheat oven to 350°F (175°C) and lightly oil a small baking dish.
  2. Clean and stem the mushrooms; reserve stems for another use.
  3. In a mixing bowl, combine minced clams, green onion, garlic, garlic salt, melted butter, oregano, breadcrumbs, beaten egg, and reserved clam juice until well mixed.
  4. Stir in Parmesan, Romano, and Mozzarella cheeses.
  5. Stuff each mushroom cap with about 1½ teaspoons of the filling.
  6. Arrange in the baking dish, drizzle with remaining melted butter, cover with foil, and bake for 35 to 40 minutes.
  7. Uncover, sprinkle with remaining Mozzarella cheese, and return to the oven until cheese is melted.
  8. Garnish with parsley and serve warm with lemon wedges.
