  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/2 tsp salt
  • 3/4 cup warm milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter, melted
  • Vegetable oil (for frying)
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. In a bowl, combine warm milk, sugar, and yeast. Let sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture along with eggs, vanilla extract, and melted butter. Stir until sticky dough forms.
  3. Turn the dough onto a floured surface and knead for about 5 minutes until smooth.
  4. Place the dough in a greased bowl. Cover and let rise in a warm place for about 1-1.5 hours or until doubled in size.
  5. Heat vegetable oil in a deep pan to 350°F (175°C).
  6. Roll out the dough to about 1/2 inch thick and cut into squares or triangles.
  7. Fry the beignets for about 2-3 minutes until golden brown.
  8. Drain on paper towels and dust with powdered sugar while still warm.
