Instructions
- In a bowl, combine warm milk, sugar, and yeast. Let sit for about 5 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Add the yeast mixture along with eggs, vanilla extract, and melted butter. Stir until sticky dough forms.
- Turn the dough onto a floured surface and knead for about 5 minutes until smooth.
- Place the dough in a greased bowl. Cover and let rise in a warm place for about 1-1.5 hours or until doubled in size.
- Heat vegetable oil in a deep pan to 350°F (175°C).
- Roll out the dough to about 1/2 inch thick and cut into squares or triangles.
- Fry the beignets for about 2-3 minutes until golden brown.
- Drain on paper towels and dust with powdered sugar while still warm.
