  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon cornstarch + 1 tablespoon water
  • 1.5 cups cooked rice, your choice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper, diced
  • 1/4 cup green onions, chopped

Instructions

  1. Heat oil in a large skillet over medium-high heat. Add chicken and cook until browned (5-7 minutes). Stir in minced garlic and sauté for an additional 30 seconds.
  2. In a bowl, whisk together soy sauce, pineapple juice, honey (or brown sugar), and vinegar; add to the skillet with chicken and bring to a simmer.
  3. Mix cornstarch and water in another bowl; stir into the skillet to thicken the sauce for about 2-3 minutes.
  4. Add pineapple chunks, diced red bell pepper, and green onions; heat through for about 2 minutes.
