Ingredients
- 4 cups chicken stock (low sodium)
- 5 shiitake mushrooms (sliced)
- 1/2 cup seafood mushrooms (or button mushrooms)
- 1/4 cup carrot (julienned)
- 1/2 cup soft tofu (cut into strips)
- 2 large eggs (beaten)
- 1 tbsp soy sauce
- 2 tbsp cornstarch
- 2 tbsp white vinegar
Instructions
- In a small bowl, mix cornstarch with cold water to create a slurry; set aside.
- In a medium pot, heat the chicken stock and season with soy sauce.
- Bring to a boil, then reduce heat and add shiitake mushrooms, seafood mushrooms, carrots, and optional chili peppers. Simmer for about 2 minutes.
- Gently stir in the tofu strips.
- Add the cornstarch slurry and simmer until slightly thickened (30-60 seconds).
- Slowly pour in beaten eggs while stirring to create ribbons.
- Finish with green onions, white vinegar, salt, and pepper to taste.
