- 1 tsp coconut oil or butter (optional)
- Pastel candy eggs (2–4 per cookie, depending on size)
- Colorful sprinkles or nonpareils (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together flour, cocoa powder, and salt in one bowl.
- In another bowl, beat softened butter with granulated and brown sugars until fluffy. Add vanilla extract and egg; mix well.
- Gradually combine dry ingredients into wet mixture until a dough forms.
- Scoop tablespoon-sized portions of dough onto the baking sheet and flatten into disks. Bake for 8–10 minutes; let cool completely.
- Melt chocolate chips in increments in a microwave-safe bowl, adding coconut oil if desired. Combine with chow mein noodles until coated.
- Shape chocolate-coated noodles into nests atop cooled cookies, filling centers with melted chocolate as desired. Press pastel candy eggs into the nests.
