  • 1/2 cup milk or dark chocolate chips for filling
  • 1 tsp coconut oil or butter (optional)
  • Pastel candy eggs (2–4 per cookie, depending on size)
  • Colorful sprinkles or nonpareils (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together flour, cocoa powder, and salt in one bowl.
  3. In another bowl, beat softened butter with granulated and brown sugars until fluffy. Add vanilla extract and egg; mix well.
  4. Gradually combine dry ingredients into wet mixture until a dough forms.
  5. Scoop tablespoon-sized portions of dough onto the baking sheet and flatten into disks. Bake for 8–10 minutes; let cool completely.
  6. Melt chocolate chips in increments in a microwave-safe bowl, adding coconut oil if desired. Combine with chow mein noodles until coated.
  7. Shape chocolate-coated noodles into nests atop cooled cookies, filling centers with melted chocolate as desired. Press pastel candy eggs into the nests.
