Ingredients

  • 357 g (2 3/4 cups) all-purpose flour
  • 210 ml (1 cup + 2 tbsp) warm water
  • 1 tsp instant yeast
  • 1 tsp salt
  • 42.6 g (3 tbsp) unsalted butter, melted
  • 32 g (2 1/2 tbsp) sugar
  • 8090 g (1/2 cup) cranberries
  • 8090 g (1/2 cup) raisins
  • 6070 g (1/2 cup) currants
  • Optional: 80-90 g (1/2 cup) dried cherries

Instructions

  1. In a mixing bowl, combine warm water and sugar; stir until dissolved. Add instant yeast and let sit for about 5 minutes until bubbly.
  2. In another bowl, whisk together flour, salt, cinnamon powder, cardamom powder, and nutmeg powder (if using).
  3. Combine melted butter and vanilla extract into the yeast mixture, then gradually add the dry ingredients to form a dough.
  4. Fold in cranberries, raisins, currants, and cherries until evenly distributed.
  5. Knead on a lightly floured surface for about 5-10 minutes until smooth and elastic.
  6. Place dough in a greased bowl, cover it with a cloth or plastic wrap, and let rise in a warm place for about 90 minutes or until doubled in size.
  7. Punch down gently and shape into a loaf; place it in a greased baking pan.
  8. Cover again and let rise for another hour.
  9. Preheat oven to 180°C (350°F) and bake for approximately 40 minutes or until golden brown.
  10. Allow cooling in the pan for about 10 minutes before slicing.
