Ingredients

  • 3 cups uncooked pasta
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 1 small red onion (chopped)
  • 1/2 cup Kalamata olives
  • 3 mini cucumbers (chopped)
  • 1 cup little tomatoes (halved)
  • 5 ounces crumbled feta
  • Salt & pepper (to taste)
  • 2 tablespoons red apple vinegar
  • 3 tablespoons olive oil
  • 1/2 teaspoon Dijon mustard
  • 1 clove garlic (minced)
  • 1 teaspoon fresh parsley (chopped)
  • 1/2 teaspoon dried oregano
  • 1 teaspoon brown sugar

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Drain and cool under running water.
  2. In a jar, combine the dressing ingredients: vinegar, olive oil, mustard, garlic, parsley, oregano, brown sugar, salt, and pepper. Shake well to mix.
  3. In a large mixing bowl, combine cooled pasta with chopped vegetables and olives. Pour the dressing over and toss gently to combine.
  4. Season with additional salt and pepper if needed. Chill for at least 30 minutes before serving for best flavor.
