Ingredients
- 3 cups uncooked pasta
- 1 red bell pepper (chopped)
- 1 green bell pepper (chopped)
- 1 small red onion (chopped)
- 1/2 cup Kalamata olives
- 3 mini cucumbers (chopped)
- 1 cup little tomatoes (halved)
- 5 ounces crumbled feta
- Salt & pepper (to taste)
- 2 tablespoons red apple vinegar
- 3 tablespoons olive oil
- 1/2 teaspoon Dijon mustard
- 1 clove garlic (minced)
- 1 teaspoon fresh parsley (chopped)
- 1/2 teaspoon dried oregano
- 1 teaspoon brown sugar
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente. Drain and cool under running water.
- In a jar, combine the dressing ingredients: vinegar, olive oil, mustard, garlic, parsley, oregano, brown sugar, salt, and pepper. Shake well to mix.
- In a large mixing bowl, combine cooled pasta with chopped vegetables and olives. Pour the dressing over and toss gently to combine.
- Season with additional salt and pepper if needed. Chill for at least 30 minutes before serving for best flavor.
