  • 1 3/4 cups sugar
  • 4 large eggs
  • 1/2 cup salted butter

Instructions

  1. Set up a double boiler by filling a medium saucepan with 2 inches of water and bringing it to a boil. Reduce heat to medium-low.
  2. In a heatproof mixing bowl, whisk together lemon juice, lemon zest, sugar, and eggs. Add cubed butter.
  3. Place the bowl over simmering water and whisk continuously for about 20-25 minutes until thickened.
  4. Check consistency; it should coat the back of a spoon at around 170°F.
  5. Strain through a fine mesh sieve into a clean glass bowl to remove lumps.
  6. Cover directly with plastic wrap and let cool before refrigerating for at least 4 hours.
