  • 2 cups corn (fresh or frozen; grilled preferred)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese (plus extra for garnish)
  • 1/4 cup chopped fresh cilantro (plus extra for garnish)
  • 1 green onion, sliced
  • 1 tbsp lime juice
  • 1 tsp chili powder (plus extra for garnish)
  • Salt and pepper to taste

Instructions

  1. Cook rotini pasta in salted boiling water until al dente; drain and rinse with cold water.
  2. Grill fresh corn until lightly charred; cool and cut kernels off the cob, or thaw frozen corn.
  3. In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, salt, and pepper; mix until smooth.
  4. Add cooked pasta, grilled corn, cotija cheese, cilantro, and green onion to the dressing; toss gently to coat.
  5. Chill in the refrigerator for at least 30 minutes to meld flavors before serving. Garnish with additional cotija cheese, cilantro, and chili powder.
