- ⅔ cup starchy potato (cubed)

- ¾ cup flour
- 2 tbsp vegan butter
- 2 tsp sage (densely packed)
Instructions
- Boil water in a pot over medium heat. Add cubed pumpkin and potato; cook until tender, about 15 minutes. Drain well.
- In a mixing bowl, mash the cooked pumpkin and potato until smooth. Let cool slightly.
- Add salt and flour to the mixture, stirring until a slightly sticky dough forms.
- Lightly flour your work surface and divide the dough into sections. Roll each into ropes about ¾ inch thick and cut into bite-sized pieces.
- Bring salted water to a boil and add gnocchi in batches; they are ready when they float (about 2-3 minutes). Use a slotted spoon to remove them.
- In a skillet, melt vegan butter over medium heat, adding sage leaves until fragrant.
- Toss cooked gnocchi in the sage butter until well coated and serve hot.
