Ingredients
- 2 large eggplants
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 cups ricotta cheese
- 1 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 2 tablespoons fresh basil, chopped (or 1 teaspoon dried)
- 1 teaspoon dried oregano
- ¼ teaspoon nutmeg (optional)
- 3 cups marinara sauce
- 2 cups shredded mozzarella cheese
- Extra Parmesan and basil for garnish
Instructions
- Preheat oven to 400°F (200°C) and line baking sheets with parchment paper.
- Slice eggplants lengthwise into ¼-inch thick slices. Brush with olive oil and season with salt and pepper. Roast for 15–20 minutes until softened.
- In a bowl, combine ricotta, Parmesan, egg, garlic, basil, oregano, nutmeg (if using), salt, and pepper until smooth.
- Spread ½ cup marinara sauce in a 9×13-inch baking dish. Fill each eggplant slice with 1–2 tablespoons of ricotta mixture, roll up tightly, and place seam-side down in the dish.
- Pour remaining marinara sauce over the rolls and sprinkle with mozzarella and extra Parmesan.
- Cover with foil and bake for 20 minutes. Remove foil and bake for another 15 minutes until bubbly and golden.
- Let rest for 5–10 minutes before serving, garnished with fresh basil.
