  • 2 Tablespoons butter
  • 3/4 lb top sirloin cubes
  • Salt and pepper to taste
  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion (chopped)
  • 2 medium carrots (peeled and chopped)
  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese (shredded)
  • 3 Tablespoons chives

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat butter and olive oil over medium-high heat. Brown seasoned beef cubes for about 6-8 minutes.
  3. Add chopped onions and carrots; sauté until softened, about 4-5 minutes.
  4. Sprinkle flour over the mixture, stir, then add apple cider and beef broth. Bring to a boil.
  5. Transfer to an oven-safe pan, cover tightly, and bake for 1 – 1½ hours until beef is tender.
  6. While the stew bakes, boil peeled potatoes in salted water until fork-tender. Drain and return them to the pot.
  7. Mash potatoes with milk, sour cream, shredded cheddar cheese, and chives until smooth.
  8. Serve hot stew generously over creamy mashed potatoes.
