  • 3/4 cup granulated sugar
  • 1/4 cup water
  • 14 oz can sweetened condensed milk
  • 12 oz can evaporated milk
  • 1 3/4 cups heavy whipping cream
  • 1 1/2 Tbsp vanilla extract
  • 5 large eggs (room temperature)
  • 1/4 tsp fine sea salt

Instructions

  1. Preheat your oven to 350°F and prepare a kettle of boiling water for the water bath.
  2. In a saucepan, combine sugar and water; bring to a boil until golden brown. Pour into a non-stick cake pan.
  3. Blend the condensed milk, evaporated milk, heavy cream, vanilla extract, eggs, and salt until smooth. Strain into the cake pan over caramel.
  4. Cover with aluminum foil and place in a roasting pan filled halfway with boiling water.
  5. Bake for 70-80 minutes until slightly jiggly in the center. Cool at room temperature before refrigerating for at least 6 hours.
  6. To serve, run a knife around the edges and invert onto a platter.
