  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 3 cups low-sodium chicken broth
  • 2 cans great northern beans, drained and rinsed
  • 2 cans diced green chilies (one spicy, one mild)
  • 1 can whole kernel corn, drained
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • Fresh cilantro, chopped (for garnish)
  • 1/2 cup reduced-fat cream cheese, softened
  • 1/4 cup half-and-half cream
  • Sliced jalapeños (for garnish)
  • Sliced avocados (for garnish)
  • Dollop of sour cream (for garnish)
  • Tortilla strips (for garnish)
  • Grated Monterey Jack or Mexican cheese (for garnish)

Instructions

  1. Prepare the ingredients by chopping the onion and garlic and draining the beans and corn.
  2. In a slow cooker, combine the chopped onion and garlic with the chicken breasts, drained beans and corn, and diced green chilies.
  3. Pour in the chicken broth and sprinkle with seasonings (salt, black pepper, cumin, oregano, chili powder, cayenne).
  4. Cover and cook on low for 6 hours or high for 3 hours until the chicken is fully cooked.
  5. Shred the chicken using two forks and return it to the slow cooker.
  6. Stir in softened cream cheese and half-and-half until creamy.
  7. Serve hot with desired garnishes.
