  • 200 grams granulated sugar
  • 200 grams almond meal
  • 100 grams shelled pistachios, finely ground
  • 6 large eggs
  • 1 tsp baking powder
  • A pinch of salt

Instructions

  1. Prepare the oranges by boiling them in water for about 30 minutes until soft. Let them cool.
  2. Blend the cooled oranges (removing any seeds) into a smooth puree using a food processor.
  3. In the food processor, combine the orange puree with sugar, almond meal, ground pistachios, baking powder, and salt; blend until smooth.
  4. In a separate bowl, whisk the eggs until frothy, then mix them into the orange-nut mixture until fully combined.
  5. Preheat your oven to 180°C (350°F). Grease or line a 9-inch round cake pan with parchment paper.
  6. Pour the batter into the prepared pan and smooth out the top. Bake for 45-50 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
