  • 1 cup Granulated sugar
  • 1/2 cup Butter (unsalted)
  • 1/4 tsp Kosher salt
  • 2 Eggs (large)
  • 4 Egg yolks (large)

Instructions

  1. Prepare the tart dough by combining flour, powdered sugar, and salt in a food processor. Add cold butter and pulse until pea-sized pieces form.
  2. Mix in the egg and vanilla until the dough comes together; avoid overmixing.
  3. Wrap the dough in plastic wrap and chill for at least 1 hour.
  4. Roll out the chilled dough on a floured surface to fit into a 9-inch tart pan; trim excess edges and prick holes in the base.
  5. Freeze for 20 minutes before preheating your oven to 350°F (180°C). Bake for 15-20 minutes until lightly golden brown.
  6. For the lemon curd filling, whisk together lemon juice, zest, sugar, eggs, and yolks in a saucepan over low heat until thickened. Remove from heat and mix in butter until smooth.
