Ingredients
- 4 large Yellow onions, thinly sliced
- 2 tbsp Butter
- 1 tbsp Olive oil
- 2–3 sprigs Fresh thyme
- Salt & pepper, to taste
- 12 oz Egg noodles or pappardelle
- 2 cups Beef broth or chicken/vegetable broth
- ½ cup White apple vinegar, optional
- 1 cup Heavy cream or half-and-half
- 3 cloves Garlic, minced
- 1 cup Gruyère cheese, grated
- ½ cup Parmesan cheese, grated
- 2 oz Cream cheese, softened
- 2 tbsp Fresh chives, chopped, for garnish
- 1 tsp Worcestershire sauce, optional
- 1 tsp Balsamic vinegar, optional
- 1–2 Bay leaves, optional
- Fresh parsley, for garnish
Instructions
- In a large skillet, melt butter with olive oil over medium heat. Add thinly sliced yellow onions and season with salt. Cook slowly for 30–40 minutes until deep golden brown.
- Stir in minced garlic and fresh thyme. Deglaze with white apple vinegar if desired, then add beef or chicken broth and simmer for 10 minutes.
- Cook egg noodles or pappardelle in salted water until al dente; reserve 1 cup of pasta water before draining.
- Combine drained pasta with the onion mixture in the skillet, tossing to mix well.
- Gradually stir in heavy cream and add grated Gruyère and Parmesan until melted.
- Mix in softened cream cheese to achieve the desired creaminess, adjusting consistency with reserved pasta water as needed.
