  • 4 large Yellow onions, thinly sliced
  • 2 tbsp Butter
  • 1 tbsp Olive oil
  • 23 sprigs Fresh thyme
  • Salt & pepper, to taste
  • 12 oz Egg noodles or pappardelle
  • 2 cups Beef broth or chicken/vegetable broth
  • ½ cup White apple vinegar, optional
  • 1 cup Heavy cream or half-and-half
  • 3 cloves Garlic, minced
  • 1 cup Gruyère cheese, grated
  • ½ cup Parmesan cheese, grated
  • 2 oz Cream cheese, softened
  • 2 tbsp Fresh chives, chopped, for garnish
  • 1 tsp Worcestershire sauce, optional
  • 1 tsp Balsamic vinegar, optional
  • 12 Bay leaves, optional
  • Fresh parsley, for garnish

Instructions

  1. In a large skillet, melt butter with olive oil over medium heat. Add thinly sliced yellow onions and season with salt. Cook slowly for 30–40 minutes until deep golden brown.
  2. Stir in minced garlic and fresh thyme. Deglaze with white apple vinegar if desired, then add beef or chicken broth and simmer for 10 minutes.
  3. Cook egg noodles or pappardelle in salted water until al dente; reserve 1 cup of pasta water before draining.
  4. Combine drained pasta with the onion mixture in the skillet, tossing to mix well.
  5. Gradually stir in heavy cream and add grated Gruyère and Parmesan until melted.
  6. Mix in softened cream cheese to achieve the desired creaminess, adjusting consistency with reserved pasta water as needed.
