  • 1/4 cup Fresh Lemon Juice
  • 2 tablespoons White Apple Vinegar
  • 1 teaspoon Dijon Mustard (Optional)
  • 1/2 cup Vegetable Oil

Instructions

  1. Bring a pot of salted water to boil. Add trimmed green beans and cook for about 5 minutes until tender-crisp. Drain and plunge into ice water to stop cooking.
  2. Thinly slice the red onion and place it in a mixing bowl.
  3. In another bowl, whisk together fresh lemon juice, white apple vinegar, Dijon mustard (if desired), salt, pepper, and vegetable oil until blended.
