- 8 large fresh peaches, peeled, pitted and sliced
- 1/3 cup organic brown sugar
- 1/3 cup organic sugar
- 1 tsp lemon juice
- 2 tsp corn starch
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 1/2 cups all purpose flour
- 1 1/3 cup organic brown sugar
- 1/3 cup organic sugar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 stick earth balance® butter, cut into small pieces
- 1/3 cup boiling water
- 4 tsp organic sugar
- 1 1/2 tsp cinnamon
Instructions
- Preheat oven to 425°F (220°C).
- Peel, pit, and slice the peaches; place in a large mixing bowl.
- Add brown sugar, organic sugar, corn starch, lemon juice, cinnamon, and nutmeg to peaches; mix gently.
- Transfer coated peaches to an ungreased 9 x 13 baking dish and bake for 10 minutes.
- In a medium bowl, whisk together flour, sugars, baking powder, and salt. Cut in butter until crumbly.
- Stir in boiling water until combined.
- Spoon topping over baked peaches evenly.
- Mix additional sugar and cinnamon; sprinkle over the top.
- Bake for 35 minutes or until golden brown.
- Allow to cool slightly before serving with your favorite ice cream.
